Boxing Day Turkey Curry

This is what Reg did with his left over turkey from Christmas day, and you can also do this with any roasted chicken from your Sunday lunch!

Useful Reg advice:
"Don't put the skin. If you want to put the skin, it'll become a rubbish."
"Don't go to supermarket looking for 'oh this drink goes with this'. Just go with whatever you like."
"Do the rice last so you can enjoy the drink."

Preparation time: 10 mins           Cooking time: 20 mins           Spice level: Tame (for Reg!)

Ingredients (Serves 3-4 people)
1 onion
3 cloves of garlic
1 thumb of ginger
1 green chilli
2 tomatoes
300 – 400g of turkey
3 cardamom
2 cloves
½ tsp chilli powder
½ tsp turmeric (haldi)
1 tbsp curry powder
¾ tsp baking powder
1 tsp salt

Instructions 
Chop onion, garlic and ginger. Heat the pan and add oil for frying. Add the onion, garlic, ginger and baking powder and cook until onions are soft. Take the cardamom and pinch to open slightly then add the cardamom and cloves to the pan. Stir in the curry powder, turmeric, chilli powder and salt. Add the tomatoes immediately after so the ingredients don’t burn. Stir until soft then add the turkey. Heat through for 10-15 minutes and add water where necessary. 

The perfect rice
For 4 people, you need 1 cup of rice.
1 cup rice + 2 cups water
                                                                                                                                                             Wash the rice in cold water until the water runs clear. Put the rice and water into the microwave (yes, microwave!) for 15 minutes (at 900 watts). When the rice is cooked, leave it in the microwave for 1 minute, then take it out, fluff with a fork and leave to stand for another minute. Your rice is ready.

  1. Just made a Reg curry and it was bang tidy. I just followed the recipe and it was better than from a takeaway... different, but better. I was worried about burning the spices so I stuck the tomatoes in first and that seemed to work fine - don't know if Reg would sanction it though!
