Watch Reg show us how to make a very simple and delicious Indian snack, and explain what upma actually is!

Useful Reg advice:
"Wherever you go, you get a Upma."
"Make to entertain your guests and you can have with cup of tea. Or a lager."
"We've got hands to use. That is our best equipment."

Preparation time: 5 mins          Cooking time: 15 mins            Spice level: Alreet

Ingredients (Serves 3 - 4 people)
2 cups of cold water
1 cup of semolina (fine/medium grain)
2 chopped onions
2 cloves of garlic
¼ thumb of ginger
1 small handful of cashew nuts
1 tbsp split peas
4 tbsp vegetable oil
½ tsp turmeric
Salt to taste

Thali mix:
½ tsp cumin seeds
½ tsp mustard seeds
½ tsp coriander seeds
½ tsp opium seeds (poppy seeds)
1 dried red chilli

Heat the oil in the wok then add the chopped onions, garlic and ginger, cashew nuts and split peas. When the onions are brown, add the thali mix and the chopped chilli. Stir until seeds are cooked, then add the turmeric and salt. Add the water and wait until it boils, then immediately add the semolina by sieving it through your fingers. Immediately stir continuously until mixture is thick. Put a lid on the pan and leave for a few minutes to set. Your upma is ready to serve.
